Vindaloo Masala

  • 12 cloves garlic

  • 2 tsp jeera or cumin seeds

  • 2-3 dried red chillies

  • 1 tsp black peppercorns

  • 1/2 tsp turmeric

  • 5 tbsp white vinegar



Rest

  • 2 Tablespoon hot oil

  • 1 tsp brown sugar

  • 2 tsp salt, or to taste

  • 700 gm pork shoulder, cut into 4 cm cubes

  • 1 cup vegetable oil

  • 1 cup water

  • 1 teaspoon salt

Method

Leave the pork for 2 hours at room temperature.

Grind the spices together with garlic and vinegar to a fine paste. Add a little water if needed to allow grinding effectively. Transfer to a large bowl. Add hot oil, brown sugar and salt and mix well. Add the pork and mix well. Cover it and let marinate for 15 minutes.

Put all the ingredients in a pan and bring to a boil. Reduce the flame and cook covered for 15 minutes
